hello everyone, my name is wang xin. i am a sommelier and brewer at beijing yanjing beer co., ltd., and i am also a national beer judge. before entering the beer industry, i didn’t drink much beer and knew little about beer. through study and practice in the workshop, i gradually gained an in-depth understanding of beer. i discovered that there are so many different varieties and flavors in beer. i found that i may have some sensitivity in this aspect, so i gradually began to learn more about beer. generated some interest. as a sommelier, tasting more than 60 glasses of beer every day is indeed a big challenge for me. on the one hand, it is in terms of alcohol consumption, because you may not be familiar with it at the beginning, and you need to drink more to truly feel each different flavor. on the other hand, in terms of sensitivity, it requires a lot of energy and concentration to feel the different or subtle differences. so i think it’s a big challenge to my drinking capacity and my physical fitness.
in terms of a single product, my favorite is raspberry wheat. this is a fruity beer that combines wheat white beer with raspberry juice. during the process, we also used many different samples repeatedly, constantly adjusting the proportion of juice, sweet and sour, and wine, and finally adjusted the taste to the most suitable state, that is, both to ensure good taste and good appearance, you also need to communicate with consumers in a timely manner through tasting skills to understand their feedback and needs for this product, and through constant running-in and adjustments, you can improve this product. product launch. at present, the feedback from consumers in the market is relatively good, which i am quite pleased with. every product we develop uses our own technology to improve the quality of each product. no matter how much effort we put in in the early stage, the happiest thing is to see our products being loved by consumers in the market. this is what we feel the most glorious time.
i have been working here for 17 years and i take public transportation to and from get off work every day. some colleagues also asked, "why don't you drive a car when you have a car at home?" faced with my colleagues' questions, i smiled and said, "if i drove, i would drive drunk every day!" i feel that my family has given me a lot of support in this regard. a girl who has just graduated and is engaged in the industry of sommelier may not be particularly understandable to outsiders. in fact, in order for me to better engage in this industry, my family also endured some discussions. i think on the one hand, i am grateful for my family’s support in this regard. on the other hand, sommeliers also have certain requirements for their diet. in order to maintain a sommelier’s sensitive palate, spicy foods are actually all stimulating foods. not edible. therefore, my family is very cooperative in this regard, and my usual diet is relatively light. in order to protect the sensitivity of my sense of smell, i have not used cosmetics, lipstick or perfume at the age of 40. this is because of my love for work and to brew better beer. in every industry, everyone has put in a lot of effort to do their job well. i just want to say that this industry or profession may have some special requirements for sommeliers. if you want to do a good job in your profession, more or less at least some extra effort is required.
now, china has become the largest beer producer and consumer in the world, which makes me feel that the responsibility is more important and the mission is more glorious!
